Tiivistelmä

Tämän kandidaatintyön tavoitteena on tehdä kirjallisuuskatsaus oluen valmistuksen mittauksiin ja mallintamiseen sekä miten niillä vaikutetaan oluen laatuun ja aromiin. Työssä käsitellään perinteistä oluen valmistustapaa, eikä käydä läpi eri olut tyyppien valmistustapoja.

Työn alussa on esitelty oluen valmistusprosessi. Valmistusprosessin vaiheet on esitelty vaihe vaiheelta tiivistetysti. Valmistusprosessin jälkeen kerrotaan oluen valmistuksen mittauksista ja esitetään, miten ne vaikuttavat oluen laatuun. Työn loppuosassa esitellään oluen eri pääprosessien mallintamista.

Esiteltäessä oluen valmistusta pyritään selvittämään, miksi erilaisia mittauksia ja mallintamista tehdään, jotta varmistutaan oluen korkea laatu. Johtopäätöksenä voidaan todeta, että oluen laadun varmistamiseksi tarvitaan useita erilaisia mittauksia.

Measurements and modelling of beer production

Abstract

The aim of this bachelor’s thesis is to conduct a literature review on measurements and modelling of beer production and how they affect the quality and aroma of beer. The work deals with the traditional way of making beer, and does not go through the ways of making different types of beer.

At the beginning of the work, the beer manufacturing process is presented. The stages of the manufacturing process have been presented step by step in a condensed manner. After the brewing process, the measurements of the beer production are explained and how they affect the quality of the beer is presented. The final part of the work presents the modelling of the different main processes of beer.

When introducing beer production, the aim is to find out why different measurements and modelling are done in order to ensure the high quality of the beer. In conclusion, it can be stated that several different measurements are needed to ensure the quality of beer.
